Chi Hi Li is a traditional variety of Napa cabbage that is now regarded as a rare hearting heirloom. This cabbage typically forms a tall, oblong, heart composed of tightly-wrapped, large, delicate, pale-green leaves with broad white midribs, and can weigh up to 2kgs. When planted in late spring or summer, this cabbage will not develop a heart but will instead produce a loose head of leaves. The leaves are more tender, sweet, and mild in flavour compared to the standard cabbage, with a distinctive mustardy kick. They can be eaten both raw or cooked, and are particularly well suited for stir-fries, soups, and fermenting into kimchi.
